Excellent cooking essential, close to perfection

I find this a highly versatile dish that is actually better than more highly regarded materials for some key dishes. The advantage of it being able to be microwaved, easily refrigerated, frozen, and transported (thanks to the snap on lid) make it a real kitchen workhorse. They are also nestable. Now the glass is relatively thick so two stacked dishes is probably about the height of 1.5 dishes. I've used it for cakes, bread pudding, salads, sweet potato pie, and casseroles. Everything cooks fine and I like being able to see the contents from the side, especially when storing leftovers. I've worked for years to perfect crispy and fluffy roast potatoes. I'd always used my thick stainless steel roasting pan. But, when needing to cook for a large party, I resorted to using this dish as a spare. I didn't have high hopes but it was a great discovery. The potatoes crisped up much more quickly and evenly in the pyrex dish than in the more expensive metal one. It will now be my go to dish to use. Perhaps cast iron would be even better, but way more expensive and heavier and harder to clean. The only downside to this as a general roaster, compared to metal, is that you can't put it on the stove. This dish does clean up pretty well but can also benefit from a good bit of scrubbing. I probably shouldn't, but I do sometimes use a light wire wool and not had a problem. Still, I do feel they are harder to keep clean than a high end non stick. But, factor in being able to use metal utensils on this dish, and the price and I think pyrex wins. The lid is a great plus but also the biggest flaw. It attaches fine, though not very tightly (certainly not air tight) and it comes down a bit too much into the dish, meaning you can't put the lid on when the dish is very full. If the lid was more like a Tupperware lid in its effectiveness then this line of dishes would be perfection.

I just don't know why I'm not crazy about this !

I have not used this in the oven yet ..... but I have used it for desserts that dont require baking.The bottom sides and corners need to be more straight instead of angled, it just seemed a little awkward to scoop things out with a metal type spatula . The cover was real disappointing. It should have been made to rise up off the pan instead it indents inward to stick to the top of your dessert, this also had happened to me and I made sure the dessert was below the upper edge of the pan when finishing. I think it came down to the cover being a softer plastic and if it would have been more ridged might have helped . And I did Not stack anything on top of this and it still happened so if you plan on stacking anything on this during transport DON'T. I just had a hard time trying to like this, It didn't seem to be a true 9x13 so I measured the bottom corners from corner to corner (outside) and it is closer to 8"x12" the top measures corner to corner inside 8.5" x 12.5". so if you need a true 9" x 13" dont buy this. It seemed to be a quality made product it just needs to be tweaked a bit. In my opinion I just had a hard time trying to like this !
