Works Well - Read the Instructions for Best Results

You’d think I didn’t have to say “Read the Instructions for Best Results” but I’m saying this for myself as much as anyone who thinks instructions are only for when you get stuck. This is a large appliance but it can be stored away in between sharpenings so that’s not really an issue. It is built like a tank and you’ll probably have it for the rest of your life. It’s a great design - providing you with the various stages to properly sharpen and finish your various knives. It works really well and relatively quick to use - you must take appropriate time when dragging the blades through the stages in order to properly sharpen the knife. I am so glad I have this sharpener - it is SO MUCH cheaper than taking my knives to get sharpened and even more so than replacing my knives.

Yes it works

So I got this to sharpen my chef 8 inch Misen, 100 year old boning knife and family knives including our Henkel serrated knives. I was whet stoning my Misen and got so bored and aggravated of doing that I stopped using the knife. I finally decided to get this Chef choice 12 XL to make things easier. What I got looked nothing like the picture in regards to nomenclature on the front as shown in the pictures. Wouldn't even know it was a 15 as nothing was identifying it nor did it come in a box but the label has model 15.... which version!?! Could not even find the 0101500 version it says it is. As you can see from the pictures it is not made in the USA but assembled. The equivalent of me buying a bike from china and attaching the pedals and chain. Very misleading but I'm used to these lies and expect it. Now on to the product. It took my 40 - 50 passes on my misen to get the degree of sharpness which is more my issue and misens good steel quality. Go slow and let the machine do the work. Do not put pressure on the knife downward. Also I noticed to engage the cutting wheels I had to arc the blade as I pulled it through or it would miss spots on the blade as it curves. Not exactly user proof. Once I got the cadence It did well and my Misen was razor sharp and better than what I could whet stone myself. I did notice left and right side sharpening had different sounds and engagements which meant to me it was not precise. It works though. My Henkel serrated did nothing but maybe dull my 20 years chef knife in the 3rd level for polishing so I need to figure that out. Instructions are good and express how to do the different blade types though I'm not convinced they work right. Would I recommend this ???? Well I know how to make my misen razon sharp and wonderful to use and that is my 90 % kitchen knife now so for yes I will not return it. For others that need a more simple sharpener I don't think I would recommend it as it is finicky with how you drag the blades through and there is play to mess it up unless I got one with quality control issues.
