Please Don’t Tell
But it wasn’t our fault. We really meant to do a writeup for the Kai Shun Pro Mandolin. We just got caught up in playing Tetris and lost track of time. And then our web guy started yelling “Kai Shun Pro Mandolin up next!” and, well, here we are.
However, don’t let that stop you from buying a Kai Shun Pro Mandolin to slice your potatoes like a professional. Just consider it a serving suggestion. You can use the three different cutters (inspired by a 700 year old Japanese blade!) to make tetronimos! Then maybe you can try and rebuild the potato by dropping each… okay, we’re reaching, we admit it. We just want to get back to our game anyway.
A Kai Shun Pro Mandolin can make great fries, or wedges, or chips, or whatever you call them. But only a Tetris Master can clear the screen when the lines are at the top. And really, it would be good to have both at once.
Features
Warranty: Shun Lifetime Limited
Features:
- 16-degree, single-bevel blade design inspired by the 700-year-old Japanese Yanagiba blade
- Made from the same high-quality VG-10 steel as the Shun Pro knives
- Safe design; food carriage handle on side of mandolin ensures that your hands are never near the blade
- Hollow-ground back of the blade creates an air pocket between the blade and the food, reducing friction and allowing for an easy glide pattern during use
- Can cut a 2-lb potato without prior prep work
- Designed to meet the rigors of daily use in restaurants, but designed for the home gourmet
- NSF certified for use in commercial kitchens
- Eco-friendly with removable main blade, allowing for resharpening rather than discarding when the blade is dull
- Comes with three different blades in addition to main blade, making plank fry, standard fry, and julienne cuts
- Adjustable deck allows the user to set at any height, not just pre-set thicknesses
- Main blade can be easily resharpened with a fine grit whetstone
- Main deck (aside from food spike and feet) dishwasher safe; handwash recommended
Sharpening Recommendations:
- Regular sharpening (as needed) with a whetstone
- Soak the whetstone for about 20 minutes, set on a damp cloth for stability, and pull the knife’s edge across the whetstone at a 16 degree angle. The wide shinogi (bevel) on the knife can be used as a guide, making it easy to maintain the knife’s sharpness
