Quinoa Enchilada Casserole

Cooking Instructions:

Add soup mix to 3 cups of water and 1 tablespoon of olive oil and stir. Bring to a boil, cover and simmer on LOW until quinoa absorbs all the water and is tender (about 15 minutes). Remove from heat, let sit for 10 minutes, and enjoy

If Baking:
Immediately pour the warm mixture out of the pot into a lightly oiled casserole dish with an additional 1/4 cup of water. Stir in cooked chicken, shredded mozzarella OR cheddar cheese and sprinkle cheese and green onions on top. Bake at 350 degrees for 20 minutes or until cheese is golden brown and bubbly

Cooking Instructions:
- Add soup mix to 2 1/4 cups of water and 2 tbsp. of vegetable or olive oil and stir. Tasty Tip:
- Add chopped cilantro, scallions and cashew pieces with a drizzle of olive oil on top. Delicious warm or cold as a side dish or a main entree. It is wonderful with added vegetables and protein of choice

Coconut Lentil Curry

- Crock Pot: Add soup mix to 6 cups of water in crock-pot and stir. Cook on HIGH for approximately 3 1/2 hours. Check soup after 2 1/2 hours and add 1/2 cup of water if needed. OR cook on LOW for 6 to 7 hours
- Insta-Pot: Pour soup mix and 5 cups of water into Insta-Pot. Cook on high Pressure for 10-minutes. Vent OR slow-release once cooking cycle is complete

- Garnish with fresh cut cilantro, toasted cashews, and sour cream. Excellent with pita bread and rice
