The Miyabi Mosaic collection features the Zwilling J.A. Henckels Special Formulated steel which combines sharpness, cutting edge retention, and is corrosion resistant. Each blade undergoes a special ice-hardening process called Friodur which enhances the hardness of the steel, adds flexibility and corrosion resistance. The blade features a 19° blade angle and is hand-honed with a 3-step traditional Japanese Honbazuka sharpening process. The blade is accented with a beautiful Micarta D-shape handle.
