In our own cafés, Citizen is the standard offering for espresso, where it evokes a heavy caramel body offset by potent autumn spices and a chocolaty finish.

Guatemala | Q’anil
Q’anil is a coffee grown and harvested by the members of the Rio Azul Cooperativo located in Jacaltenango, deep in the Huehuetenango state of northern Guatemala. Q’anil is the name of the mountain the coffee is grown on, and also a local legend that dates back to the time of the Mayans, from whom the Jakaltenans are direct descendents. The coffee is processed by our good friends at Los Volcanes coffee based in Antigua. They work with Rio Azul on wet-milling, and then finish off the coffeein their dry mill at Beneficio Esperanza before exporting. The result is a coffee with a mellow friendly acidity that is bursting with sweetness and a subtle complexity not often seen. This is a coffee that can shine anyway you brew it.

Approach – How to roast a Guatemalan coffee. Step one, purchase a delicious coffee that has been grown in Guatemala. Step two, well to be honest this is a trade secret, but basically it involves just roasting the coffee nice and light to highlight the amazing complexity and cup quality found in Guatemalan coffees. Step three, profit. It’s a good business plan but please be sure to give us some credit if you use it.

Colombia | Santa Barbara | DARK
This single origin dark roast is an homage to Colombian coffee. We set out to create a roast that would highlight the spectacular sweetness that characterizes the best Colombian coffees, while emphasizing a round body and a great balance between acidity and bitterness.
Santa Barbara is one of the most consistent coffee producers we buy from. They have top-notch facilities and their commitment to quality is evident at every level of their organization. Buying coffee from them is a pleasure and we strive to roast it with the same care and attention to detail they produced the coffee with.

Approach – This dark roast is intended to fully develop the coffees natural sweetness, and balance the coffee’s acidity with a slight bitterness. The challenge is to have a dark roast that doesn’t taste roasty or smokey, but is sweet, balanced, and strong.
Bosley
A little of this, a little of that and a whole lot of classic Northern Italian espresso flavor. So classic we should be putting it in a tin, but we like our Bushwick Collective murals better. Well developed (but not dark roasted) with great solubility, dial this in for a great espresso and milk beverage!

Mapendo Next is a project of Mighty Peace Coffee, a pretty new coffee trader based
out of the Congo that is looking to make a big impact in the lives of Congolese coffee farmers. While it’s no secret that the DRC has experienced more than its fair share of trouble, what might not be well known is that the region nestled alongside lake Kivu grows some of the tastiest coffees in all of Africa. Blessed with fertile rich soil, high elevation and prime coffee climate, the province of South Kivu has been delivering coffees that are hands down as delicious as any coffee being grown in the DRC’s more well known neighbors like Kenya, Rwanda, or Uganda.
When Mighty Peace approached us to see if we would be interested in coffee from the Congo, we were hesitant at first. Of course, we love to feature coffees that are off the beaten path and from up and coming producing regions, but as a small roaster we have to offer high quality coffee- it’s the only way for a roaster our size to compete with the big boys. Jim, one of Mighty Peace’s founders, assured us we would be stoked with his beans and so we cupped them blind against samples from Rwanda and Kenya.
Well, imagine our surprise when all of the highest scoring cups on the evaluation table came from the DRC by way of Mighty Peace. What a revelation. We tasted coffees that sparkled with crisp acidity and stone fruit we would normally associate with Kenya, but had wonderful body and sweetness. Very structured and balanced. Just the way we like it.
This first lot from Mighty Peace, Mapendo Next, is from a cooperative of smallholder
farmers, about 40% of which are women. The Cooperative currently has 3 washing
stations, and is hoping to invest in a 4th. Supporting quality farmers by buying their
wonderful coffees is a no-brainer and helps farmers continue to invest in their farms
and families.

Honduras COMSA Coop Natural
Description: Marcala, Honduras

Process – Natural raised bed process

In the year 2000, 62 Honduran coffee farmers joined together with a common goal to transform their farms from conventional to organic production and formed COMSA (Cafe Organico Marcala, S.A). In 2001, fostered by a foundation called Funder, COMSA earned their organic certification from Bio Latina which has enabled them to market their coffee to more international buyers and realize better selling prices for their coffee. In February 2006, COMSA applied for and were granted Fair Trade certification status. COMSA uses the Fair Trade price premium to fund many social projects including paying teachers’ salaries and purchasing school supplies. Royal Reserva Natural is exclusively processed by COMSA for our importing partner Royal Coffee New York.
The COMSA co-op started trying their hand at natural process mainly due to Costa Rica’s rising prices for naturals during the micro lot and experimental process craze in 2013/2014. Everyone was looking for a fruit forward non-African option as the next big thing. COMSA was able to increase their volume after a few years of experimenting from their micro-lot program after getting all their producers to buy into the program, and man are we happy they did!
This is a great shot of espresso with warm caramel chocolate notes and a hint of dried raspberry finishing on the palate. Central American natural processed coffees have come a long way and if the fine folks at COMSA are any indication, we have a lot to look forward to!

Colombia Santa Maria

Fresh off the boat from sunny Colombia is our delicious new coffee Santa Maria. Grown in Santa Maria, a small city outside of Huila’s capital city Neiva, this delightful coffee is a great representation of the flavors unique to the Huila region of Colombia. The area is a high plain, smooshed between massive mountain ranges south of Bogota. Coffee growing on the sides of volcanoes gets the benefit of some of the most dizzying elevation in Colombia, as well as the much lauded volcanic soil full of nutrients plants love. The unique terroir and growing conditions in Huila seem to create coffees with wild and bright acidity, but also rounded out by deep fresh fruit sweetness
Approach – Colombian coffees are extremely approachable from a roasting point of view. They are usually very high quality and processed very well, so as a roaster we really have a lot of options about how to roast them. Any type of roast can usually work well for Colombian coffees. We decided to do a really sweet medium roast for the green. We’re trying to highlight the bright apricot acidity, but at the same time we really want to bring out the caramel and chocolate tones that give this coffee a nice round body and long embracing aftertaste
