Hojiblanca Crushed Olives by Elia
Probably the perfect olive, this varietal called Caspe has been grown since ancient times in Cordoba, Spain, because of its hot, dry climate. Collected by farmers in August when the olive is green, they have a distinctive strong, bitter flavor. Produced by Elia, the olives are cured and then crushed before being packed to make the flesh more tender. Nothing else is added, but Chef Andres loves to marinate them with some fresh peeled garlic or a stalk of tarragon – the crushed olives absorb almost any flavor. He uses them in everything: tapas, potato salad or even a good martini – now that is an astonishing cocktail!
Marcona Almonds
From Valencia, comes Spain's most prized possession in the form of a smooth, tan almond. Known as the "Queen of Almonds", the Marcona is the most precious in Spain and is indigenous to the country. It is sweet and softer than most almonds. This item adorns pastries rather than being an ingredient. Theses Marconas by Mitica are peeled, fried in sunflower oil, and salted to highlight the almond's flavor, not overpower it.
Cornicabra Extra Virgin Olive Oil
The cornicabra olive hails from Toledo, in central Spain. Produced by Casa d Hualdo in Castille-La Mancha, Cornicabra Extra Virgin Olive Oil is the only varietal protected by the Designation of Origin Montes de Toledo.
