I made fudge for the first time! It turned out to be easy and yummy. Used mostly chocolate chips, with one cup of peanut butter chips. Not the semi-sweet ones. I make cake and brownies often, and will add this recipe to my favorites.

Fudge recipe

3 C. (18 oz.) semi-sweet chocolate chips
14 oz. can sweetened condensed milk
Dash salt
1 1/2 t. vanilla
1 C. chopped walnuts

In heavy saucepan, over low heat, melt chips with sweetened condensed milk and salt. Stir often.
Remove from heat; stir in walnuts and vanilla.
Spread evenly into wax paper lined 8- or 9-inch square pan. Chill 2 hours or until firm.
Turn fudge onto cutting board; peel off paper and cut into squares.

started with homemade ramen soup (chicken broth, ramen noodles, peas, and corn) - because I feel like I have a headcold

Followed with two Belgian waffles with blueberries and whip cream.
--and I'm still hungry, off to look for something else. . . .

Mmm I've been craving brownies lately. I recently read in a magazine to add canned pumpkin instead of oil (or at least replace part of it) and it makes them less fattening and very moist. Anyone ever try that?

Never knew about canned pumpkin until I read this. Wonder what that tastes like? Applesauce is supposed to be another replacement for oil and/ or eggs. Did you make some brownies yet?

Oh, sorry didn't check back here for a bit. I did! And the canned pumpkin worked! I replaced the oil almost entirely, (but did add a tiny bit of oil just in case), and I put more pumpkin than I would have put oil.

The result was pretty good. Someone liked them more than regular brownies, others thought they were equally good. I would say they are a little more cakey than regular brownies, when following the 'chewy brownie' recipe, and they are pretty good.

I also mixed in some slices of banana in area of the pan and it tasted good (if you like banana). Banana and chocolate = good combo for me.

I did hear about the applesauce replacement too, but haven't ever tried it.

I made myself a pork chop and a baked potato for dinner.
A local chef told me about a rub he puts on pork and it is delicious! It is: dried basil leaves, a little garlic salt, salt & pepper.
I sprayed the chop w/Pam, put on the rub, sprayed it again to make the rub stick. I pan-fried it, but it works well on the grill too. I go really heavy on the basil because it is just mouth-watering with the pork!

Lunch was baked acorn squash with butter and a little brown sugar. So yummy!

I have a Tuscan potato soup recipe that I need to make at some point. I love potato soup, but just haven't mastered soup making. Need more practice!
